broccolini with ricotta & toasted breadcrumbs

1 head broccolini, washed, stems trimmed

1/2 cup ricottahoneypanko breadcrumbsolive oilcrushed red pepper flakesparmigiano reggiano
  1. preheat oven to 425 degrees.
  2. place broccolini on a sheet pan and drizzle with olive oil, salt & pepper. massage oil into broccolini and spread in an even layer on pan.
  3. roast for 20 minutes, or until broccoli is slightly charred and cooked but not soft
  4. heat olive oil in a pan over medium heat, then add panko breadcrumbs. toast, stirring often, until brown and crispy. season with salt, pepper, and crushed red pepper flakes
  5. spread ricotta on a plate and top with honey, salt and pepper
  6. place broccolini over ricotta, then top with bread crumbs and freshly grated parmigiana
