broccolini with ricotta & toasted breadcrumbs
1 head broccolini, washed, stems trimmed
1/2 cup ricottahoneypanko breadcrumbsolive oilcrushed red pepper flakesparmigiano reggiano- preheat oven to 425 degrees.
- place broccolini on a sheet pan and drizzle with olive oil, salt & pepper. massage oil into broccolini and spread in an even layer on pan.
- roast for 20 minutes, or until broccoli is slightly charred and cooked but not soft
- heat olive oil in a pan over medium heat, then add panko breadcrumbs. toast, stirring often, until brown and crispy. season with salt, pepper, and crushed red pepper flakes
- spread ricotta on a plate and top with honey, salt and pepper
- place broccolini over ricotta, then top with bread crumbs and freshly grated parmigiana
