the best kale salad

Note: this is a very basic recipe, meant to serve as a base to build upon. Top it with anything you like.


1 bunch of kale, washed, stems removed

freshly grated parmigiano reggiano cheese

sesame seeds


  1. tear kale into medium sized pieces.

  2. add oil, lemon juice, and salt

  3. use hands to massage kale until tender and very slightly wilted

  4. begin toasting sesame seeds in a small pan on the stove top

  5. grate a generous helping of parm over the kale salad, mix slightly

  6. once sesame seeds are very toasted, quickly pour directly onto kale salad

  7. mix and eat as is, or top with any of your favorite salad toppings
